Mirabelle plum ice cream with vanilla and cinnamon

Equipment

  • Ice cream machine

Ingredients

  • 600 g Mirabelle plums
  • 100 g Sugar
  • 50 ml Mascarpone
  • 50 ml Natural Yogurt
  • 50 ml Cream
  • 1 pcs Cinnamon stick
  • ½ pcs Vanilla bean
  • ¼ pcs Lemon

Instructions

  • Cut the Mirabelle plums in half and remove the pit
  • Cut the half vanilla bean lenghtwise
  • Add the plums to a sauce pan together with the sugar, cinnamon, the vanilla bean and a squeeze of lemon juice
  • Cook for approx 20 minutes
  • Let the mixture cool down completely (place in freezer if you want to speed up the process)
  • Once cold, add to blender to and mix it smooth
  • Mix the cream, yogurt and mascarpone into a smooth texture
  • Blend the plum mixture and cream/cheese/yogurt mixture
  • Add the mixture to the ice cream machine and let it work its wonder :-)
