Summer recipe for Mirabelle plum ice cream with vanilla and cinnamon

My husband came home with a huge bag of Mirabelle plums from a colleague at work. It is one of my favorite fruits for tarts and my definite favorite ingredient in a jam. But he brought home so much it inspired to try out something new in addition. I came across this ice cream recipe from Larderlove. I changed it a bit to fit with what I had available in the fridge and it turned out amazing! It is creamy and delicious and the subtle spice taste really enhances the sweet Mirabelle. This Mirabelle plum ice cream is quite rich in calories. If you want a slightly lighter version, just swap the dairy products into light versions.

HOW TO SUCCEED

1: Use ripe plums for more taste

2: Make sure your cooked plum mixture is cooled down before to mix it with the dairy products

Let’s get started

Ingredients

  • 600 g Mirabelle plums
  • 100 g Sugar
  • 50 ml Mascarpone
  • 50 ml Natural Yogurt
  • 50 ml Cream
  • 1 pcs Cinnamon stick
  • ½ pcs Vanilla bean
  • ¼ pcs Lemon

How to do it

Cut the Mirabelle plums in half and remove the pit. Cut the half vanilla bean lengthwise. Then add the plums to a saucepan together with the sugar, cinnamon, the vanilla bean and a squeeze of lemon juice.

Cook for approx 20-30 minutes end then let the mixture cool down completely (place in freezer if you want to speed up the process).

Mix the cream, yogurt and mascarpone into a smooth texture.

Once the plums are cold, mix them in a blender, then blend in the cream, yogurt and mascarpone mixture.

Add the mixture to the ice cream machine and let it work its wonder 🙂

How to serve the Mirabelle plum ice cream with vanilla and cinnamon

It is great to serve on its own but if you want to add a crunchy biscuit, you can add the Langue de Chat biscuits.

Ingredients

  • Once cold, add to blender to and mix it smooth
  • Mix the cream, yogurt and mascarpone into a smooth texture
  • Blend the plum mixture and cream/cheese/yogurt mixture
  • Add the mixture to the ice cream machine and let it work its wonder 🙂
