Tomato base for pizza; The shamelessly easy version, ready in 1-2-3

We had a Pizza cooking class with an Italian chef at work a few years back and this tomato base for pizza has become a classic at home ever since. It is so easy to make and so tasty! I love that it’s available in the fridge for several days ready to use if I decide to quickly throw together a Pizza for lunch or dinner.

THE TIPS TO SUCCEED

1: Try to get a qualitative tomato puree to avoid getting a sour and bitter taste to your sauce. If you feel it is too sour, add a little bit of sugar to soften the edge of it.

2: The better quality oregano you use, the tastier it gets. I usually get mine in small bags from a local oriental shop.

3: The longer the sauce infuses the tastier it gets. If you can find time to infuse at least 2 hours before you use it, it is even better…

Let’s get started

Ingredients

  • 560 g Tomato puree 1 bottle
  • 3 cloves Garlic
  • 5 ts Oregano
  • 2 ts Salt
  • 1 ts Pepper

How to do it

Start by peeling the garlic cloves and cutting them in 4-6 pieces depending on how big they are. Add them into the puree together with the oregano, salt and pepper. I usually add it all to the bottle and shake it around. You might have to use a spoon to move the ingredients down in the bottle so you get an equal spread in the puree. An alternative is to mix it all in a bowl.

Now all you need to do is to let the sauce infuse in the fridge for a minimum of 30 minutes.

Serving the tomato base for Pizza

After infusion, the sauce is ready to be spread on your dough. Make sure to pick out the garlic cloves, adding them back to the sauce for further infusion. You can keep the sauce for 5 days in the fridge.

Ingredients

  • 560 g Tomato puree 1 bottle

Instructions

  • Cut the garlic cloves in 4-6 pieces and add them to the puree. Either directly in the bottle or if you prefer in a bowl
  • Add the oregano, salt and pepper to the bottle (or bowl)
  • Shake vigourously the bottle or mix the ingredients in the bowl
  • Leave to infuse in the fridge for a minimum of 30 minutes
  • Once infused, spread the sauce on your pizza dough, picking out the pieces of garlic and adding them back to the remaining sauce to keep infusing.

Notes

The longer it infuses the tastier your sauce gets. You can keep it in the fridge for a maximum of 5 days.
