The simple recipe for the Norwegian classic apple cake

This apple cake recipe has been in the family for generations. It always has huge success wherever I serve it. There is nothing fancy or complicated about it but the taste and texture never fail! It is one of those cakes you can whip together in an instant. As long as you have 3 apples in the fridge you usually have the other ingredients around. I recommend to serve it hot, together with homemade whipped cream. You can usually serve 8 with this cake unless you have big eating teenaged boys as I do, in which case you serve 4, maximum 5… As my boys love this cake, hopefully they are the next generation to bring this recipe forward 🙂

This apple cake always has huge success wherever I serve it, and it is one of those cakes you can whip together in an instant!

THE TIPS TO SUCCEED

1: Use sweet apples, I usually use Golden but this time I used the Akane which was as good

2: The cake is best served lukewarm. And don’t forget the whipped cream!

Let’s get started

Ingredients

Dough

  • 200 g Sugar
  • 200 g Butter
  • 3 pcs Eggs
  • 200 g Flour
  • 2 tsp Baking powder

Topping

  • 3 pcs Apples
  • 100 ml Sugar
  • 1 tbsp Cinnamon

How to do it?

Heat the oven to 180°c (I use the hot air function).

The dough

Mix the butter and sugar until creamy and white.

Add the eggs, one by one and mix well.

Add the flour and the baking powder and mix one last time.

Smear a 24 cm springform pan with butter and sprinkle it with flour.

Add the mixture to the springform and equal it out.

For the apple topping

Mix sugar and cinnamon in a bowl.

Peel the apples and remove the center

Cut the apples in boats and turn them in the sugar/cinnamon mixture

Place the apples in circles starting from the outside and moving inwards until the dough is fully covered with apples.

Baking

Bake the cake for 40 – 45 minutes. The cake should be medium brown and let go of the edges of the pan.

Cut carefully around the edge and remove the side of the springform. Leave to cool down 15-20 minutes before to cut the cake loose from the bottom of the pan.

How to serve the apple cake?

This cake is absolutely best served warm. I serve it with whipped cream but you can also use crème fraiche or vanilla ice cream.
