So easy and yet so delicious; Steam cooked asparagus on the stove served with egg and bacon

I love early spring when the asparagus is back at the market. My favorite is the green one, but this recipe of steam cooked asparagus on the stove works with both white and green. This recipe puts the asparagus in the center and it is very simply steamed with only a few add ons in order to enhance its taste. Sometimes the simplest is also the best…

THE TIPS TO SUCCEED

1: Make sure you break off the lower fibrous part of the asparagus

2: Watch the cooking time, you want the asparagus to be cooked but still have a little bit of crunch left

Ingredients

  • 500 g Green Asparagus
  • 4 pcs Egg
  • 100 g Bacon
  • Parmesan
  • Olive Oil
  • Salt and Pepper

How to do it

Start by breaking off the fibrous the lower part of the Asparagus. You should feel where the natural breaking point is. By using a peeler, remove the outer skin.

Put the eggs in boiling water for 5 minutes or adjust to the cooking level you prefer. In the meantime fry the bacon bits.

Steam the Asparagus in a pressure cooker or steamer for 5-7 minutes, it depends how thick your asparagus are. Check if coooked with a sharp knife

How to serve the steam cooked asparagus on the stove

Serve the asparagus on a plate with the bacon spread over and the egg cut in two. Add grated parmesan, salt and pepper. Propose some fresh bread or a baguette on the side. You can find a recipe for crunchy French baguettes here.
